The Details

Tasting Note Pale gold with a delicate bead and fine mousse. Intense aromas of citrus zest; lemon, lime and grapefruit are overlaid with fresh honey and a hint of sea foam. A powerful wine with an elegantly structured palate and extraordinary length. Lemon myrtle, white peach and honeycomb flavours are complemented with a mouth filling texture and delicious complexity. Thirty three months ageing on yeast lees in bottle has built further complexity and subtle nuances of nougat and toasted hazelnuts.
Best Enjoyed With Fried oyster mushrooms; seared kingfish with lemon butter green beans; or eggplant and zucchini rissoni.
Treatment Chardonnay, Pinot Noir and Pinot Meunier were handpicked, tasted and assessed together to achieve the perfect balance on the day as a “field blend”. The blend was gently pressed and placed in mature French oak barrels where it remained for ten months, while the native yeasts present on the grapes completed fermentation and the wine remained on lees to build amazing complexity.
